High-protein Mossaka

Ingredients:

  • 2 medium-sized eggplant
  • 1 small potato
  • 300 grams of minced meat
  • 1 small onion ‘
  • 1 cup of tomato sauce or crushed tomato
  • 1 tbs of tomato paste
  • salt
  • pepper
  • paprica
  • onion and garlic powder

Steps:

  • Cut eggplant into slices not very thin, then bake in the oven for 20 minutes until they become soft
  • Cut the potato into thin slices and place it in the oven with the eggplant
  • Cook the meat filling. To a pot, add one tbps of olive oil, add the onion and garlic, and cook until golden, then add the meat
  • Make tomato sauce, add the crushed tomatoes/tomato sauce. Add 1 tbs of tomato paste, add seasonings to your liking, and cook for 10 min until the sauce thickens.
  • Layer the moussaka. In a baking dish add a layer of eggplant , then layer of meat and then layer of tomato sause then layer of potato and repeat
